Rajat Parr's Sandhi operation proves that California can make Burgundian-method wines without the Burgundian theatrics. The tasting room sits in a Lompoc industrial park, miles from anything photogenic, which tells you everything about their priorities. Vineyard tours hit the estate sites in Sta. Rita Hills where ocean winds and specific soil blocks produce Pinot Noir that reviewers compare to Littorai and Grand Cru. The Chardonnays show similar restraint. Tastings are customized based on your wine knowledge and purchase history—club members get library pours and advance wine chemistry lessons.
