About
Hyatt Vineyards sits on 40+ year-old estate vines in Zillah, established by Leland and Lynda Hyatt in 1983 and now run by the next generation. They grow unusual varietals for Washington—including estate Viognier fermented in stainless to preserve aromatics rather than oak it to death. The family offers in-depth tours through their crush room and barrel cellar, and the lawn seating overlooks vineyard views that stretch across Yakima Valley. Tastings happen indoors or on picnic tables outside, and they'll walk you through actual winemaking science if you're interested. Dogs welcome. Walk-ins fine most days except Tuesday-Wednesday.
The Oxto Edit
Oxto AIHyatt has been farming this same Zillah dirt since 1983, and you can taste the cumulative knowledge. They're bottling varieties most Washington wineries won't touch—estate Viognier that's actually food-friendly rather than cloying, plus whatever else the family decides to plant. The next generation runs it now, and they're leaning into the technical side: barrel tastings, crush room tours, actual science talk instead of wine poetry.
