Nova Cadamatre earned her Master of Wine before opening Trestle Thirty One, making her the first American woman to hold the title while making wine commercially. That pedigree shows in every glass. Her Chardonnays break the Finger Lakes mold—less butter and oak, more precision and tension. The Pinot Noirs are equally considered, with structure that rewards patient drinkers. The tasting lounge in Geneva feels more like a private sitting room than a tasting bar, with different seating configurations depending on whether you want a quick pour or a deep dive into library vintages.
