DeRose sits in absolute nowhere off Hollister, farming vines that cross the San Andreas fault using the near-extinct Vaché method. They dry-farm organically but don't bother certifying. The facility includes a Cold War-era bunker-like vat room with reinforced concrete. Their Cabernet Franc is what matters here—it's become the benchmark other local wineries chase. The Old Vine Syrah runs a close second. Tastings are $15 for generous pours, and they recently opened a satellite tasting room in San Martin for those who can't make the trek. The resident dog Aspen greets visitors at the outdoor tasting area. This is small-production, geologically-curious winemaking without the boutique pricing.
