CHO Vineyards sits on the west-facing hillside of Bald Peak in the Chehalem Mountains, where Dave and Lois Cho—Oregon's first Korean-American vintners—are building both a vineyard estate and a community around high-elevation Pinot Noir and sparkling wine. Their 2018 Blanc de Noirs earned 95 points and a spot in Wine Enthusiast's Top 100, beating out 23,000 wines in blind tasting—proof that Willamette Valley sparkling belongs in the conversation. The modern tasting room in Hillsboro offers panoramic valley views and a lineup that spans traditional méthode champenoise to their signature 'Dave-Method' pét-nats: raw, unfiltered, naturally carbonated sparklers that capture something wild about Oregon Pinot. The property includes a small children's play area and outdoor patio seating. Tastings are 90 minutes, six wines, with charcuterie boards and caviar service available. Open Thursday through Monday.
The Oxto Edit
Oxto AIDave and Lois Cho are building their own vineyard estate on Bald Peak's west-facing slope while making some of the Willamette Valley's most interesting sparkling wines. The tasting room overlooks their developing vines—you're literally watching a premium site come up from scratch. The pét-nats are funky and alive, the traditional sparklers are dialed, and the whole operation feels less like wine tourism and more like being let in on something that matters.
